Beef with Peppercorns

Serves 4

- 2 teaspoons vegetable oil

- 2 cloves garlic, crushed

- 1 fresh green chilli, chopped

- 500g/1 lb. topside or round steak, sliced

- 1 tablespoon green peppercorns in brine, drained, crushed

- 1 green pepper, chopped

- 3 tablespoons coriander leaves

- 1/3 cup/90 ml/3 fl. oz coconut milk

- 2 teaspoons Thai fish sauce

Heat oil in a wok over a high heat. Add garlic and chilli. Stir-fry for 1 minute. Add beef and peppercorns. Stir-fry for 3 minutes or until beef is brown.

Stir in green pepper, coriander, coconut milk and fish sauce. Stir-fry for 2 minutes. Serve immediately.
